Another day another salad...

Last week I talked about tasting ice cream off the books. The return investment resulted in gaining yada yada yada. I decided to let my son have a go at fixing his own ice cream cone so I wouldn't be bothered with temptation. I think it took him about ten minutes. You see here what I was trying to avoid? Ice cream was on the floor too and we don't have a dog.

Anyway, I seemed to have cured myself by writing about it. Maybe. Hold on I'm getting ready to make a cone right now. I'll let you know.

It's a Week 14 Weight Watchers Update


This week I wanted to share a recipe and the secret ingredients to one of my favorite salads. The secret ingredients are this OXO Chopper and bowl.

With this bowl you can fill up on more salad by chopping it up. The chopper is like a double pizza roller. You can chop up your salad fine for wraps or just a little less bulky to have a bigger salad.

Black Bean Burger Salad 6 points

Black Bean Burger Salad

What you need:

  • Salad greens
  • Grape tomatoes sliced
  • 1/2 cup of canned corn
  • 1 Morningstar Farms Black Bean Burger
  • 2 TBSP of Reduced Fat Salad Dressing (I use Kraft, Three Cheese Ranch)

Heat the Black Bean Burger in the microwave for one minute, flipping it over after 30 seconds. Chop the lettuce.

I place one little dish in the center for my salad dressing and then build the salad around it. I start with the lettuce, add the corn and the sliced tomatoes. I cross cut the burger to have 12 pieces to place around the salad.

With a creamy salad dressing I think it's better to have it on the side. I dip my fork in the salad dressing first and then load my fork with a bite.

Here's the wonderful thing....

You can eat this salad everyday for a week by changing it up: Use 1/2 cup of black beans (2 points) instead of burger or 3 oz. of chicken breasts for (3 points). Red onions are good and/or 4 TBSP of sliced black olives (1 point). Have fun with it and make it pretty. 


Week Fourteen: Lost 1.5 lbs. Total Loss: 7.5 lbs
